Goat Cheese Bruschetta
Goat cheese bruschetta
Store bought pesto sauce
French bread, sliced lengthwise
2 logs goat cheese, sliced into 8 pieces each
~ 1 Tablespoon olive oil
2 garlic cloves minced
2 medium-large ripe tomatoes, seeded and chopped
chopped basil and parsley to taste
kosher salt and cracked pepper to taste
Heat broiler. Spread pesto sauce onto slices of bread. Broil bread until just slightly toasted. Spread goat cheese slices on top, and peto on top of that. Return to broiler until slightly melted. meanwhile in skillet heat olive oil over medium heat. Cook garlic, tomatoes, basil, parsley, kosher salt, and pepper 3 minutes until warmed.
Cut french bread halves into quarters and serve tomato mixture on top. Scrumptious!!
(If you're not a big goat cheese fan, just eliminate and proceed with the rest of the recipe.)
